<p class="wp-block-paragraph">過時過節，香港⼈最愛親朋戚友共享美食佳餚，可是食⽤過多難免會影響膽固醇⽔平及⼼臟健康。⼼臟科專科郭應⿓醫⽣與堪輿學家麥玲玲師傅在《⼼誠則玲過⿓年》節⽬中，⼀同探討節⽇期間護⼼飲食的要訣。</p>



<h2 class="wp-block-heading">破解護⼼飲食迷思</h2>



<p class="wp-block-paragraph">麥師傅從⽞學⾓度分析，今年九運屬火，⼼臟容易出事，因此她選購食材時都會檢查營養標籤，選擇「零反式脂肪」的食品，⽽且以較健康的植物油烹調，務求降低對⼼臟的負擔。然⽽，郭醫⽣解釋，香港的營養標籤準則允許每⼀百克含有少於 0.3 克反式脂肪的食品標示為「零反式脂肪」<sup>1</sup>，所以看似健康的包裝食品可能都會含有少量反式脂肪。他亦提醒⼤家，不論使⽤哪種煮食油，以⾼溫油炸過的食物或多或少會產⽣反式脂肪<sup> 2</sup>。</p>

<h2 class="wp-block-heading">反式脂肪與膽固醇</h2>



<p class="wp-block-paragraph"><br>世界衛⽣組織建議，⼀般成⼈若每⽇的能量攝取為⼆千卡路⾥，反式脂肪的攝取量就應該少於 2.2 克 <sup>2</sup>，相當於兩塊曲奇<sup> 3</sup>。郭醫⽣強調應儘量避免任何反式脂肪的攝取，因為反式脂肪不單會增加體內「壞」膽固醇⽔平，更降低「好」膽固醇⽔平，長遠會增加患上⼼臟病或中風的風險 <sup>4</sup>。<br>「壞」膽固醇⽔平是⼼⾎管健康的重要指標，郭醫⽣倡議⼤家應該及早檢測，尤其是年紀較⼤或有⼼臟病家族史的⼈。根據歐洲⼼臟學會的指引，患上⼼⾎管疾病風險較低的⼈⼠應控制「壞」膽固醇⽔平在 3.0 mmol/L 或以下；極⾼風險的⼈⼠，其⽬標⽔平甚⾄為 1.4 mmol/L 或以下，並應減⾄原本⽔平的⼀半或更低 <sup>5</sup>。</p>

<h2 class="wp-block-heading">健康替代食品建議</h2>



<p class="wp-block-paragraph"><br>郭醫⽣指出，為免節慶食品導致「壞」膽固醇⽔平過⾼，可以選擇⼀些健康替代食品，如香脆可⼝的賀年食品，可以選⽤同樣脆⼝且無鹽的果仁代替 <sup>6</sup>；中秋節則以五仁⽉餅代替有鹹蛋⿈的雙⿈蓮蓉⽉餅。郭醫⽣亦建議採⽤較健康的烹調⽅式，包括使⽤氣炸鍋代替油炸。避免掉入「反式脂肪陷阱」，有助減低罹患⼼⾎管疾病的風險<sup>3</sup>。</p>

<h2 class="wp-block-heading">清淡飲食未必控醇？</h2>



<p class="wp-block-paragraph"><br>郭醫⽣表示素食者同樣有「壞」膽固醇⽔平超標的問題，所以清淡飲食未必能降低「壞」膽固醇⽔平。此時醫⽣會檢視患者的個⼈病史和⽣活習慣，並考慮以藥物控制其膽固醇⽔平<sup> 5</sup>。最後，郭醫⽣提醒⼤家⽇常要保持良好的⽣活習慣，定期運動、戒煙戒酒、充⾜睡眠、⼼境開朗，均有助減低患上⼼⾎管疾病的風險。</p>
