<h2 class="wp-block-heading"><strong>35</strong><strong>年餐飲集團回歸中環 打造「極致舒適食物」</strong></h2>



<p class="wp-block-paragraph">兩位主持今集獲邀到訪剛於星期一正式開幕的Avalon，並請來集團市務同事Elaine、總經理Austin及來自美國、擁有15年北京工作經驗的大廚Jarrod，分享這間新餐廳的理念。</p>

<p class="wp-block-paragraph">集團市務同事Elaine介紹，Avalon的誕生是集團由蘭桂坊、星街、過海到九龍發展後，重回中環的重要一步。餐廳主打「Ultra-Comfort Food」任何時間、任何心情都想吃的食物，並以國際化主題，結合Surf and Turf（海鮮配肉類）菜式，例如龍蝦卷（Lobster Roll）及炸魚薯條（Fish and Chips）。</p>

<h2 class="wp-block-heading"><strong>三個不同區域 現場爵士樂營造慵懶氣氛</strong> </h2>



<p class="wp-block-paragraph">主持人程凱欣一進入餐廳，已特別喜愛其酒吧區域，而范振鋒則對現場樂隊表演位置「心心眼」。Elaine解釋，餐廳樓底高，設有落地玻璃窗，並劃分高枱與低枱區域，讓客人可按喜好選擇舒適角落。現場設有爵士樂隊演出，大約晚上九點半開始，為中環夜生活提供一個放鬆、慢下來的音樂美食空間。</p>

<h2 class="wp-block-heading"><strong>魔鬼在細節：新鮮沙白湯、龍蝦卷與三重炸脆薯條</strong></h2>



<p class="wp-block-paragraph">總經理Austin指出，將最普通、最日常的食物做到極致化，是最高難度亦是最令人欣賞的方向，就如一碗出色的雲吞麵令人永遠難忘。他強調Avalon的西餐亦追求相同理念。</p>



<p class="wp-block-paragraph"><strong>大廚即場解說招牌菜獨特之處：</strong> 周打魚湯（Clam Chowder）：採用每日新鮮的沙白（Manila clams），湯底加入自家製煙肉，堅持每日自家烹調，層次與鮮度遠超一般版本。</p>

<p class="wp-block-paragraph">龍蝦卷（Lobster Roll）：麵包屬自家製，低糖、不加奶，質感輕盈，主要承載龍蝦與蝦肉的鮮汁。餡料混合新鮮龍蝦肉及蝦肉，並在表面灑上特製「龍蝦鹽」（lobster powder），屬新英格蘭風味的細緻變奏。</p>

<p class="wp-block-paragraph">炸魚薯條（Fish and Chips）：薯條經過三次炸製程序，先去除表面澱粉，再油炸至外脆內creamy，口感層次分明。</p>



<p class="wp-block-paragraph"><strong>甜品驚喜：蒸製布甸配雞尾酒醬汁</strong> 壓軸甜品同樣充滿心思。大廚Jarrod透露，該布甸加入黑啤，而是採用「蒸」的方法，質感更濕潤。出爐後用針打滿小孔，趁熱淋上自家焦糖，再配上一層輕盈忌廉增加質感，平衡甜度。</p>

<p class="wp-block-paragraph"><strong>泡菜雞肉漢堡留待下回分解</strong></p>



<p class="wp-block-paragraph">Elaine個人最喜愛的菜式，其實是今集未有機會品嚐的「泡菜雞肉漢堡」（Kim Chi Chicken Burger），將炸雞、漢堡與泡菜三者結合，屬她的終極舒適食物。主持人程凱欣笑言，餐廳故意不讓大家一次過試盡招牌菜，吸引食客下次再來。</p>
